1. Mistral releases OCR 4 with paragraph-level layout extraction

Mistral. Mistral released OCR 4 (mistral-ocr-4-0), and the mistral-ocr-latest alias now points to this version. The update adds an include_blocks parameter that returns a blocks array with paragraph-level bounding boxes and structural labels, and the pages parameter now accepts comma-separated digit ranges.
